Ingredients for 2 healthy verrines:
– 1 ripe avocado (150g) – the base for your smooth avocado cream
– 1/2 lime (juice and zest) – provides acidity and vitamin C
– 1 pinch of salt

– 6-8 sprigs of fresh coriander, finely chopped (+ leaves for garnish)

– 8-10 cooked shrimp (120g, peeled) – lean protein for a healthy recipe
– 1/2 mango (100g, diced) – natural sweetness for your shrimp and mango verrine
– 1/4 tsp. 1 tsp smoked paprika or sweet chili powder
– 1 tsp olive oil
– 1/2 clove garlic (optional)
– 2 tbsp whipping cream or Greek yogurt
Steps to make your mango shrimp verrine:
Prepare the avocado cream:
– Mash the avocado until smooth.
– Add lemon juice, salt, garlic and cream. Blend to a lemony avocado cream.
– Stir in chopped cilantro.
