For the base
1 ½ dl (150 g) graham cracker crumbs (or digestive biscuits, crushed)
¼ dl (50 g) granulated sugar
½ dl (115 g) melted butter
For the cream cheese filling
225 g cream cheese, soft
½ dl (100 g) granulated sugar
1 tsp vanilla extract
1 dl (240 ml) whipping cream
1 tbsp lemon juice
For the pineapple topping
1 can (565 g) crushed pineapple, drained
½ dl (100 g) granulated sugar
1 tbsp cornstarch
½ tsp vanilla extract
🔥 Step-by-step instructions
Step 1: Make the graham cracker base
Crush the graham crackers (or digestive biscuits) into fine crumbs using a food processor or by placing them in a resealable bag and rolling them with a rolling pin rolling pin.
Mix the crumbs, sugar and melted butter in a bowl. Stir until the mixture resembles wet sand.
Press the mixture into a 9-inch pie pan, making sure the bottom and sides are evenly coated.
Refrigerate for at least 15 minutes to set while you prepare the filling.
