Oven-baked salmon in a creamy lemon and herb sauce – an elegant dish ready in under 30 minutes

For about 4 servings you will need the following ingredients.

Main ingredient

4 pieces of salmon fillet (approx. 500–600 g)

For the creamy sauce

2.5 dl cooking cream

juice from 1 organic lemon

finely grated lemon zest from the same lemon

1 tablespoon fish stock

Spices and herbs

fresh dill or thyme, chopped

salt

lemon pepper

Garnish

a few extra lemon slices

fresh herb sprigs

Here's how to cook the dish step by step:

Start by setting the oven to 200°C so that it is properly hot before adding the salmon.

Lightly grease a baking dish with a little oil or butter. Then place the salmon fillets in the dish, leaving a little space between each piece.

Season the salmon with salt and lemon pepper. Place a few thin lemon slices on top of the fish for extra flavor and a beautiful presentation.

Take a bowl and whisk together the cream, lemon juice and lemon zest. Add the fish stock and chopped herbs. Stir well to combine all the flavours.

Carefully pour the sauce around the salmon in the baking dish. It should surround the fish without completely covering it.
