Is it safe to eat moldy bread?

We've all experienced it: a piece of baguette forgotten in the back of the cupboard, hard as a rock. But before we throw it away, the question arises: is it simply old or no longer edible? The answer is not always as obvious as we think... And yet, knowing the difference could very well save you dinner - and your wallet!

What the mold on your bread really says

There’s no doubt about it in the photo above: this slice of bread is no longer just plain stale. The blue-green spots visible on the surface are typical of microscopic molds that have penetrated the entire crumb, far beyond what the naked eye can see. Unlike cheese with a crust, this type of bread doesn’t get scratched: its spongy texture makes it an ideal breeding ground for invisible molds. In other words, even if you remove the affected area, the rest is potentially contaminated. Therefore, it’s best to avoid any attempt at salvage and dispose of this type of slice immediately – for your health and the health of your loved ones.

What about stale bread?

No, just because bread is dry doesn't mean it's   ready to be thrown away   ! Bread aging is a completely natural phenomenon. It's not a sign of spoilage, but rather a simple change in texture. Specifically, it's the starch in the crumb that loses moisture and recrystallizes,   making  the bread firmer. The result: goodbye soft, hello crunchy.

But don't panic, stale bread isn't dangerous to your health—unless it's moldy. And the good news is that   it can still enhance your meals   !
