These broccoli croquettes are a bit like fritters. They’re easy to make and a great way to sneak in some veggies for those who wouldn’t otherwise like the idea of ​​eating broccoli. These broccoli croquettes really take it to the next level. Since they’re baked and not fried, they’re healthier than a regular croquette. But don’t think they lack flavor. They’re full of flavor, crispy on the outside and soft on the inside. To make them, you’ll need broccoli, eggs, onion, parsley and breadcrumbs. You simply mix the ingredients, shape them into croquettes and bake. So easy and so delicious!

How to make broccoli croquettes
Boil the broccoli in boiling water for 5 minutes, let it cool under running water, then drain and pat dry with paper towels. Finely chop the broccoli.

Mix the broccoli with the cheese, onion, eggs, breadcrumbs, parsley, salt and pepper. Form croquettes and place them on a baking sheet. Bake at 180°C/350°F for 15 minutes.

Tip
If you prefer a crispier texture, spray the croquettes with oil before baking. You can also fry them in a little oil, this will make them crispier.

To make them meatier, add crispy bacon, cooked ham or smoked and chopped chicken to the frying mixture.

If you prefer a finer texture, you can blend the broccoli in a food processor until fine.

Make sure to chop the onion finely. If the pieces are too large, the croquettes will not hold together.

To stretch the mixture (especially if you are making it for a large crowd), you can add mashed potatoes.
