Baked Vegetable and Cheese Casserole

Add broccoli and cook for 2 minutes.
Drain the water and set aside. Prepare the cauliflower: Boil water in another saucepan. Add salt and 2 tablespoons of milk. Add the cauliflower and cook for 4 minutes. Drain and set aside. Prepare the vegetables: Chop the onion, carrot, garlic, mushrooms, red pepper, yellow pepper and cherry tomatoes. Heat 5 tablespoons of sunflower oil in a frying pan over medium heat. Sauté the chopped onion, carrot and garlic until softened. Add the mushrooms, red pepper and yellow pepper and sauté until softened. Add the cherry tomatoes and cook for a further 2 minutes. Set the vegetable mixture aside. Prepare the egg mixture: Whisk the 4 eggs together in a large bowl. Add a pinch of salt. Gradually add 130g of flour and mix well to avoid lumps.
Slowly add 500ml of milk, stirring constantly.
