🍮 For the cream (vanilla pudding):
2 cups milk
4 egg yolks
1/2 cup sugar
1/4 cup cornstarch
1 teaspoon vanilla flavoring
lemon zest (optional)
👩 🍳 Preparation
1️⃣ Preparation of the cream
Heat the milk with vanilla and lemon zest.
In a bowl:
Mix the yolks with sugar,
add starch
Pour in a little warm milk (to even out the temperature) and then pour everything back into the pot.
Cook over medium heat, stirring constantly, until the mixture thickens (5-7 minutes).
👉 Cover with aluminum foil and leave to cool completely.
2️⃣ Dough preparation
Mix:
flour
sugar
cocoa
salt
Add butter and crumble it. Then add the eggs and wine and knead.
👉 Wrap in aluminum foil and let it rest in the fridge for 30 minutes.
3️⃣ Shaping and baking
Roll out the dough into a thin layer (~2 mm).
Cut out circles or oval shapes.
Roll into cannoli molds and seal with egg.
👉 Fry in oil at 180 °C until golden brown.
👉 Drain on paper and let cool.
4️⃣ Build
Fill the cooled bars with cream (using a decorating bag).
Decorating:
powdered sugar chocolate
