Grate the zucchini, carrots and potatoes. Then place them in a tea towel or colander and squeeze well to remove excess water. This step is necessary so that the croquettes do not become soft.
Place the drained vegetables in a large bowl. Add the eggs, oatmeal, grated cheese, salt, and any seasonings to taste. Mix thoroughly until you have a dough that you can shape with your hands.
Shape the croquettes.
With clean hands, shape small croquettes or empanadas of the desired size.
Baking: You can choose one of three options:
Oven: Place them on a baking sheet lined with baking paper and bake at 200°C for 20–25 minutes, turning them after 10 minutes.
Hot air fryer: 180°C for 15–18 minutes.
Frying: Fry in a pan with a little olive or coconut oil until golden brown on both sides.
Serve hot with homemade sauce or a fresh salad.
