Hawaiian Pineapple Muffins

1 tsp baking soda
1/2 tsp salt
2 large eggs
1 cup crushed pineapple with juice
1/2 cup cooking oil
1 tsp vanilla extract
1/2 cup shredded coconut (optional)
1/2 cup chopped macadamia nuts (optional)

Instructions

Preheat oven to 350°F (175°C) and line a 12-inch muffin tin with paper liners.

Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.

Lightly whisk eggs in another bowl, then add crushed pineapple (with juice), cooking oil, and vanilla extract. Mix well.
