This is where the classic "turtle" shape comes together.

Line a baking sheet with parchment paper or a silicone mat.
• For each candy, arrange 3 to 4 pecan halves in a "Y" or cross shape. These represent the turtle's legs and head.
• Space them out so they don't stick together once the caramel and chocolate are added.
Step 3: Melt and Add the Caramel
Soft, chewy caramel is the heart of the turtle candy.
• Place the caramels and 2 tablespoons of whipped cream in a microwave-safe bowl.
• Microwave in 30-second intervals, stirring in between, until smooth and pourable.
• Using a spoon, spoon a generous teaspoon of melted caramel into the center of each pecan cluster. Let it drip lightly over the nuts—it will hold everything together.
• Let the caramel set for 10–15 minutes at room temperature or refrigerate for a faster texture.
Step 4: Melt the chocolate
Choose high-quality chocolate for a rich finish.
• Place the chocolate chips and 1 tablespoon of coconut oil or butter (if using) in a microwave-safe bowl.
• Heat in 20–30 second increments, stirring, until completely melted and glossy.
• Spoon a layer of melted chocolate over each caramel and pecan cluster, spreading it lightly with the back of a spoon to coat the caramel.
• Sprinkle with sea salt flakes, if desired, for a gourmet touch.
